Pumpkin patties



After the eccentric recipe of my last post, I propose you a more traditional preparation in healthy foods. This is nothing more -and nothing less!- than the well-kown Pumpkin patties.

The egg substitution I propose is excellent for people with high cholesterol levels, as well as the pumpkin provides a lot of energy with just a few calories.




The ingredients for 4 servings are:

- 1 pumpkin
- Chickpea flour as egg substitute
- 1 clove of garlic
- 1 stalk celery
- Bread crumbs to taste
- Sesame seeds to taste
- Chopped parsley to taste
- Nutmeg to taste
- Oregano to taste
- Light vegetable spray
- Salt and pepper to taste

Preparation:


1) Cut the pumpkin in half, separating the part with seeds. Cut the part without seeds into slices. Boil in water for a few minutes until almost tender.


2) Prepare the chickpea flour, achieving the consistency needed to act as an egg substitute. Spice it with garlic and parsley and add the sesame, parsley, nutmeg, oregano, salt and pepper. Soak the slices and cover with bread crumbs.


3) Place the cutlets in a baking pan with vegetable spray and bake until browned on both sides. Serve!

This preparation can be accompanied with a salad of spicy greens. In addition, we can include a plate of lemon rojadas add the cutlets.

Total time: 40 minutes
