Mediterranean Fettuccine

Mediterranean flavors are definitely one of my preferences. They have the great advantage of providing healthy ideas to traditional recipes we usually do, without losing sight of quick preparation and cooking time.

Who doesn't enjoy a pasta meal? Who doesn't enjoy feeling healthy? Who doesn't enjoy a quick and easy recipe? Most Mediterranean preparations have all these features and more.




Today I present a dish that perhaps many of you know, but I want you to take it into account in every day routine, and not just as a recipe for a special occasion.: Mediterranean Fettuccine

The ingredients for 4 servings are:

- 300 g dry Fettuccine pasta
- 1 cup cherry tomatoes
- 1 cup yellow, green and/or red peppers
- 50 g black olives
- 1 clove garlic
- 1 can artichoke heart
- 2 tbsp olive oil
- Basil to taste
- Salt and pepper to taste


Preparation:



1) Add the Fettuccine in a pot with boiling water with salt to taste.

2) While the pasta is cooking, saute the chopped basil and the peppers into brunoise in a skillet with a little olive oil. Add the artichoke hearts and cherry tomatoes, halved or whole. Add some pitted black olives, sliced​​. Mix peppers and some olives. Saute until vegetables are tender but crisp.


3) Strain the pasta al dente and add it to the pan with the vegetables. Fry for a few minutes to integrate flavors. Add chopped basil and parmesan cheese. Serve!

This is one of these preparations as simple as healthy and tasty. It has a balance between the natural flavors of the vegetables and the unmistakable comfort of eating a bowl of pasta.
