Vegetable and cheese burritos by Sattva



A few days ago, my girl and I went to Sattva, a vegetarian restaurant in downtown Buenos Aires City. It's a place we had seen from the outside for some time, and we wanted to know how their food was.


To be truth, I ate a dish that already knew, but with a few subtle differences that greatly enriched the preparation, while maintaining its nutritional and healthy values. I'm talking about a typical Mexican recipe: Vegetable and cheese burritos.


Chatting with the chef of Sattva, I asked him exactly what ingredients he used and the method of preparation, so I will share it with you now.


Ingredients for 8 burritos:


- 1 red pepper
- 1 yellow pepper
- 1 zucchini
- 1 carrot
- 2 onions
- 2 cloves of garlic
- 1 corn
- Olive oil
- 1 cup parmesano cheese
- Oregano to taste
- Salt and pepper to taste


Preparation:


1) In a skillet, brown the onion, the shredded carrot and garlic, cut into thin slices. Cut the peppers and zucchini into strips and add to the preparation. Add pepper and cook for 5 minutes. Finally, add the corn kernels previously cooked. Add salt and oregano to taste.


2) Heat the tortillas with vegetable spray in a skillet. Mix all vegetables and fill the tortillas with them and a thin slice of cream cheese.


3) Serve! As an accompaniment you can prepare a guacamole sauce, or a cream cheese and chives sauce; or just a light tomato sauce with chopped chili without seeds.




This dish is simply exquisite. The fried vegetables remind us of oriental preparations, while cheese gives it a western touch. The tortillas and the way to assembly the preparation is definitely the Mexican part that reminds us of the origin of this recipe.


I recommend comparing the lightness of the vegetables with a stronger sauce, like guacamole or tomato with chili. The cream cheese and chives sauce can be offered as an alternative to guests that doesn't tolerate spicy or acid sauces.
