Stew of beans, a Spanish classic

In this case, I want to share with you a Spanish recipe that a friend of mine cooks frequently. It's a Stew of beans, with all the distinctive flavors of the best recipes of Spain but with some changes that make it a healthier preparation.

This dish is ideal for winter as paprika, bacon and beans converge into a intense flavor, ideal for you to warm up and share a good time with your friends or family on those cold and gray days. It's also an easy, two-step preparation that takes time but almost no effort.




Ingredients for 4 servings:

- 300 gr. white or red beans
- Olive oil
- 1 tablespoon paprika
- 1 onion
- 1 green pepper
- 2 cloves of garlic
- 50 g bacon
- 200 g Zancarrón
- Water to taste

Preparation:


1) The day before, put the beans in a recipient with water for at least for one night. The next day, wash up the beans with cold water.


2) Cut the onions, garlic, green pepper, and bacon (previously remove the excessive fat) into pieces and fry all ingridients in a skillet with a little olive oil. Incorporate the water and add the beans, the Zancarrón, paprika, and finally salt and pepper to taste. Cook for two hours, add a little chopped parsley and... ready! Serve hot.


The bacon, in small quantities and with the excessive fat removed, provides an intense flavor in the right proportion without reducing the health properties of this recipe. The parsley gives a fresh aroma and taste that make up the intense flavor of the paprika. I definitely recommend this dish accompanied with good wine, soft background music and a good friendly chat.
