Pork with onions and apples

I have a friend that really likes healthy cooking, and he does great dinners like this one. This is a classic and easy recipe I like to share it with you. Pork with onions and apples.

The pork meat is rich in iron and proteins. It has low amounts of saturated fat and is rich in monounsaturated fat, helping to regulate the cholesterol in blood. It's an ideal meat to replace some traditional preparations of beef. By including vegetables and fruits, we get a complete and healthy recipe and, above all, very tasty.

For 4 servings, we need:

- 1 lb. pork
- Olive oil
- 2 onions
- 2 green onions
- Juice of 1 lemon
- Juice of 1 orange
- Fat-free vegetable broth
- 1 green apple
- 1 red apple
- Salt and pepper to taste

1) Extract the fat from the pork and cut it into cubes. Fry them in a pan with some olive oil and reserve.

2) Cut the onions and green onions into eighths. Fry in a pan with olive oil, and when they are a little toasted, add the lemon juice, the orange juice and 50 ml of broth. Cook until onions are slightly tender, and then add the pork with salt and pepper.

3) Cut the apples into slices and cook on each side on a pan without oil.

4) Serve the pork with the apples. If you wish, sprinkle a little parsley on the preparation after serving.

This recipe is a classic, with a touch of sour and sweet, perfect for a light but consistent dinner.

If you make it, please tell me how it went!
