Vegetable lasagna by Primafila restaurant (Argentina)

There's a famous restaurant in Buenos Aires, Argentina, that prepares a delicious and healthy variation of the classic lasagna: A Vegetable lasagna with light tomato sauce.


If you ever come to Buenos Aires, the restaurant is named "Primafila" and it's located in Recoleta district. But if you don't, I want to post the recipe so you can taste it wherever you are.




Preparation:


We need to cut into strips, for 4 servings:


- 2 pre-peeled carrots
- 2 onions
- 1 clove of garlic
- 2 eggplants, previously removing the middle with the seeds
- 1/2 green pepper
- 2 green onions and 2 leeks


1) Fry the ingredients in olive oil, adding them in the listed order. The vegetables must be crunchy. Add salt and pepper and leave it in the pan.


2) Prepare a simple and healthy sauce of fresh tomato and basil: Cut four tomatoes into cubes, after removing the seeds, and cook them in a pan (without oil) in low heat for 5 minutes. When ready add salt and pepper and about 10 leaves of basil into strips.


3) In a baking pan add a thin layer of our tomato sauce and then a layer of lasagna dough. Place our vegetables above the lasagna and then add another layer of dough. Finally, add another layer of tomato sauce and basil and, optionally, a little parmesan or creamy cheese.


4) Send the pan to medium oven for half an hour and that's it! Serve the lasagna, adding a little sauce to the empty plate and then one square per serving.


This preparation has a Mediterranean touch, thanks to the basil, the olve oil and the vegetables, while the tomato sauce slightly reminds us of a more traditional lasagna. But most importantly, it's a very healthy preparation and its taste is just incredible. Remember, healthy food tastes way better with pepper. Use it! :)
