Stuffed round zucchinis

My grandmother used to prepare this exquisite dish whenever my family went to her place for dinner.


It's a classic easy European recipe, but suffered several variations in time. I'm talking about Stuffed round zucchini


In this case, I propose a variation of my own that makes it more healthy, but maintaining its taste and originality.



Ingredients for 4 servings:


  • 100 g onion
  • 400 g dark green zucchini
  • 50 g grated cheese
  • 1 red pepper
  • 1 clove garlic
  • 300 g ground beef
  • Olive oil
  • Parsley to taste
  • Light vegetable spray to taste
  • Cumin to taste
  • Salt and pepper to taste

Preparation:


1) Cut the base of the zucchini and remove the top. With the help of a spoon, empty the interior.
Boil in salted water for about 4 minutes. Rest in cold water to stop cooking and drain in absorbent paper.


2) In a skillet with olive oil, brown the ground beef for a minute. Add the chopped garlic, chopped onion and pepper, and when browned add cumin, parsley, salt and pepper.


3) Spray a baking dish with vegetable oil. Arrange the zucchini and place them with their filling. Cover with grated cheese. Cook in low oven for 10 minutes. That's it! Serve!


You can put a layer of tomato sauce in the bottom of the dish, and then arrange the squash on it. The tomato sauce doesn't have significant amounts of calories and and helps to enhance the flavors. Garnish with chopped parsley.


Calories per serving: 193 Kcal


This dish can be made at any season. The filling warm us in cold seasons, and on the other hand, the fresh zucchini, help to eat this dish in summer.
