Quesadillas



In this case I wanted to propose to you a different breakfast. An alternative to begin the day with more energy, with a Latin American style.

Or, if you prefer, you can prepare this recipe for lunch. It is a dish of Mexican origin, with some variations to make it easy and more healthy: Quesadillas.





The ingredients for 4 servings are:

- 8 tortillas
- 1 cup beaten egg or egg substitute
- 4 slices of tomato
- 4 slices of low fat cheese
- 1 onion
- Salt and pepper to taste

Preparation:


1) Preheat oven to medium heat. Place the tortillas on a nonstick baking sheet. Add the egg above, season with salt and pepper. Add a slice of tomato, add onion cut into strips, and a slice of cheese. Add the second tortilla, pressing gently.


2) Bake for 10 minutes, turn and bake 5 minutes more or until cheese is melted. Cut into halves and serve!

Pure simplicity! Most of the preparation time is just preheat. An ideal breakfast if we get up early, because it gives us energy to sustain our morning activities until lunch without problems.

Cook time: 15 minutes
Total time: 25 minutes
Calories per serving: 220 calories
