Rose juice

I am fully aware that this preparation is an eccentricity. Something that many of you have never seen, and may not dare to prepare.

I only tell you that if you dare, you'll discover a taste you didn't think could exist. With this preparation, you can adde a particular aroma and taste to traditional foods and desserts. And the people who will eat your meals will ask: How did you achieve that unique taste?

Roses are the protagonists of this juice. While lemon for an acid touch and sugar are inevitably necessary, without the roses it would be just a watery lemonade. So here we go: Rose juice (Rosensaft).

The ingredients for 6 cups are:

- 20 roses petals
- 2 liters water
- juice of 4 lemons
- 1 kg sugar

Preparation:

1) Put the petals in a glass container. Heat the water to 100 º F, add lemon juice and pour the dressing over the petals thoroughly washed. Cover the bowl and let stand 12 hours.

2) Pour the liquid back into the saucepan and bring to medium heat. Remove just before reaching the boiling point. Filter, add sugar and carry back to the fire, stirring constantly until it boils. Immediately pour into bottles and cap them appropriate.

With this preparation we can dip or cover cakes, we can use it as syrup for ice cream and desserts in general, or as accompanying sauces. Or we can simply add it to our favorite tea. It's also ideal to drink as juice or prepare a drink.
