Pumpkin patties

After the eccentric recipe of my last post, I propose you a more traditional preparation in healthy foods. This is nothing more -and nothing less!- than the well-kown Pumpkin patties.

The egg substitution I propose is excellent for people with high cholesterol levels, as well as the pumpkin provides a lot of energy with just a few calories.

Wonton and dip

As you have noticed, many of the healthy preparations that I propose in this blog are not usually known to be healthy by people, but this is not because they aren't, but because they often are associated with sodium canned ingredients, or with excess of chemicals or preservatives.

But these same preparations can easily be replaced or varied, increasing protein and reducing the amounts of saturated fat. So in this case, I will propose an extreme variation of a typical preparation both in America and in Latin America: Chips and dip, but with a substitute that makes up our dish. Wonton and dip.

Quesadillas

In this case I wanted to propose to you a different breakfast. An alternative to begin the day with more energy, with a Latin American style.

Or, if you prefer, you can prepare this recipe for lunch. It is a dish of Mexican origin, with some variations to make it easy and more healthy: Quesadillas.

Chicken with peppers and passion fruit

Chicken with peppers and passion fruit: A recipe with tropical dyes, typical of Central America, all natural and healthy but very tasty and warm.

Simple ingredients like chicken and pepper with passion fruit to add a Latin connotation.

Stuffed peppers with rice and mushrooms

One of the most healthy, rich and nutritious ingredients is pepper. It can be used raw or cooked, with or without skin, and combines very well with salads, cheeses, nuts and rice dishes.

In this case we'll fill them with rice and mushrooms: My uncle used to make this recipe for dinner, so I did a couple of variations to make it healthier and joined it to my diet. So here we go: Stuffed peppers with rice and mushrooms.

Stuffed round zucchinis

My grandmother used to prepare this exquisite dish whenever my family went to her place for dinner.

It's a classic easy European recipe, but suffered several variations in time. I'm talking about Stuffed round zucchini

In this case, I propose a variation of my own that makes it more healthy, but maintaining its taste and originality.

Ricotta pie with green apples puree

This time, I want to tell you about a healthy recipe that I saw on a TV show from a cuisine channel of Latin America (ElGourmet.com).The cheff makes delicious preparations and low in calories.

This is a well-known traditional Italian dish to enjoy a rich dessert after lunch, at afternoon or at a party.: I'm talking about the Ricotta pie.

In this case, also served with a puree of green apples.

Vegetable and cheese burritos by Sattva

A few days ago, my girl and I went to Sattva, a vegetarian restaurant in downtown Buenos Aires City. It's a place we had seen from the outside for some time, and we wanted to know how their food was.

To be truth, I ate a dish that already knew, but with a few subtle differences that greatly enriched the preparation, while maintaining its nutritional and healthy values. I'm talking about a typical Mexican recipe: Vegetable and cheese burritos.

Stew of beans, a Spanish classic

In this case, I want to share with you a Spanish recipe that a friend of mine cooks frequently. It's a Stew of beans, with all the distinctive flavors of the best recipes of Spain but with some changes that make it a healthier preparation.

This dish is ideal for winter as paprika, bacon and beans converge into a intense flavor, ideal for you to warm up and share a good time with your friends or family on those cold and gray days. It's also an easy, two-step preparation that takes time but almost no effort.

Cheese stuffed gnocchi with scarparo sauce

This is definitely one of my favourite foods. I met the original recipe at the restaurant of the Italian Club in Pinamar (picture), Argentina, and then I created my own version. I'm talking about the Cheese stuffed gnocchi with scarparo sauce, an even more delicious version of the traditional gnocchi, increasing its taste and quality.

Moussaka, a classic greek recipe

Greek cuisine has the best features of Mediterranean cuisine, which is very healthy and tasty. It also has features of Middle Eastern gourmet culture. Olive oil, tomatoes, eggplants, wheat and cheese are the common ingredients of this cuisine.

The Moussaka is, in principle, a casserole of vegetables and meat (lamb in this case) with bechamel sauce. For those who prefer a vegetarian version, the lamb can be replaced with more vegetables, like mushrooms, carrots or potatoes.

Pork with onions and apples

I have a friend that really likes healthy cooking, and he does great dinners like this one. This is a classic and easy recipe I like to share it with you. Pork with onions and apples.

The pork meat is rich in iron and proteins. It has low amounts of saturated fat and is rich in monounsaturated fat, helping to regulate the cholesterol in blood. It's an ideal meat to replace some traditional preparations of beef. By including vegetables and fruits, we get a complete and healthy recipe and, above all, very tasty.
